- 1/2 bottle Soju or cooking wine (for odor removal)

Step 1
Behold this large, magnificent yellowtail collar! Known as ‘eoduilmi’ (head is the tastiest part), the delicious collar of the yellowtail is a delicacy. Aren’t you curious about its incredible taste?

See those plump, fresh yellowtail eyes? They indicate superior freshness! Rinse the collar thoroughly under cold running water to remove any impurities. Cleaning off scales and blood clots will ensure a cleaner taste.

Now, let’s eliminate any fishy odor! Pour half a bottle of soju (or cooking wine) over the collar and gently rinse it to effectively neutralize any smell. Pat the collar completely dry with paper towels. Then, generously season it with rosemary, dried basil, and freshly ground black pepper.
