Main Ingredients- 1/4 medium cabbage (approx. 200g)
- 1/4 small onion
- 1 piece carrot (approx. 30g)
- 3 large eggs
- 1/2 piece unsalted butter (approx. 5g)
- 1 tbsp grapeseed oil
- 2 slices cheddar cheese
- 2 pinches salt (approx. 1g)
- A pinch of freshly ground black pepper

Step 1
Recently, I was inspired by Chef Yoon Yoo-sun’s cabbage dish featured on the TV show ‘Pyeonstorang’. I decided to make my own version of a cabbage toast sandwich using the fresh cabbage I had at home. This breadless version is surprisingly thick and crisp, making it a wonderfully satisfying meal. Let’s get started on this delicious recipe that’s sure to tantalize your taste buds!
Step 2
Begin by thinly shredding the cabbage. Finely shred the carrot and onion as well. To ensure cleanliness and freshness, soak the shredded cabbage in water mixed with 1 tablespoon of vinegar for about 5 minutes. Afterward, drain it thoroughly in a colander. For best results, use a salad spinner to remove excess moisture, preventing the mixture from becoming too watery.
Step 3
In a large bowl, combine the shredded cabbage, carrot, and onion. Crack the 3 fresh eggs into the bowl. Mix everything together well to ensure the vegetables are evenly coated with the egg.
Step 4
Instead of 1 teaspoon of salt, start with just 2 small pinches, adjusting to your taste later. It’s better to add more salt if needed than to make it too salty.

Add a pinch of freshly ground black pepper for an extra layer of flavor. You can adjust the amount of pepper according to your preference.

Heat a non-stick skillet over medium-low heat and spread 1 tablespoon of grapeseed oil evenly. Add 1/2 piece of unsalted butter and let it melt. Ladle a portion of the cabbage mixture into the pan, forming a thick patty. Cook for about 3-4 minutes until the bottom is golden brown and slightly crispy.
Step 7
Once the bottom is golden brown, carefully use a spatula to cut the patty in half directly in the pan. This makes it easier to flip.

Flip the two halves over and cook for another 2 minutes. Once both sides are somewhat cooked, flip them again. Place 2 slices of cheddar cheese on top of each half, allowing the cheese to melt beautifully.

Now, it’s time to assemble your cabbage toast. Place one cooked cabbage patty on a plate. Layer the 2 slices of melted cheddar cheese on top. Then, carefully place the other cooked cabbage patty on top to create your sandwich.
