Moo Sup Pad Rice: A Delicious Thai-Style Pork and Rice Dish
When you’re craving Thai food, this is one of the most convenient and satisfying dishes you can easily make at home. It’s a flavorful pork stir-fry served over rice, perfect for a quick and delicious meal.
Main Ingredients- 400g ground pork
- 1/2 onion, thinly sliced
- 2 chilies (red or green), thinly sliced diagonally
- 5-7 perilla leaves, thinly julienned
- 1/2 stalk green onion, finely chopped
- 3 eggs
Seasoning Ingredients- 1 Tbsp oyster sauce
- 1 Tbsp fish sauce
- 1/2 Tbsp dark soy sauce (for color, can substitute with regular soy sauce, adjust to taste)

Cooking Instructions
Step 1
First, prepare all the ingredients for your Moo Sup Pad Rice. Wash and slice the vegetables accordingly. Thinly slice the onion, and thinly slice the chilies diagonally after removing the seeds. Finely julienne the perilla leaves and finely chop the green onion. Keep the eggs aside for frying later. This preparation stage is key to a smooth cooking process!
Step 2
Heat a generous amount of cooking oil in a large frying pan over medium-low heat. Add the chopped green onions and stir-fry until their fragrance is released and they become aromatic, creating ‘green onion oil’. Once fragrant, increase the heat to high and add the ground pork. Break up the pork with your spatula and stir-fry until it’s no longer pink and has turned white.
Step 3
Once the pork has changed color, add the sliced onions and chilies to the pan. Continue to stir-fry with the pork until the vegetables begin to soften and become slightly translucent. Now it’s time to add the seasonings. In a small bowl, mix together the oyster sauce, fish sauce, dark soy sauce (or regular soy sauce), sugar, water, and black pepper to create your sauce. Pour this sauce into the pan with the pork and vegetables. Stir-fry over high heat for about a minute until everything is well coated. (Tip: Instead of mixing all the water into the sauce beforehand, you can add a little extra water directly to the pan when stir-frying. This will create a slightly saucy texture that’s perfect for mixing with rice. If using regular soy sauce instead of dark soy sauce, be mindful of the amount to avoid making the dish too salty!)
Step 5
While the pork mixture is finishing, fry the eggs in a separate pan. You can cook them to your desired doneness, whether sunny-side up with a runny yolk or fully cooked. To serve, place a portion of cooked rice on a plate. Spoon the Moo Sup mixture onto one side of the rice, and carefully place a fried egg on the other side.
