  • 1 stalk green onion
  • 5 Tbsp red pepper flakes
  • 3 Tbsp corn syrup (or rice syrup)
  • 4 Tbsp sugar
  • 1 Tbsp toasted sesame seeds
  • 1 Tbsp perilla oil (or sesame oil)
  • 1 Tbsp minced garlic

Cooking Instructions

First, divide the 1kg of salt-preserved chilies into two portions. One portion will be used whole, and the other will be chopped for easier eating. This way, you can enjoy two different textures and uses.

Let’s start by making the seasoning for the whole chilies. In a bowl, combine 3 Tbsp soy sauce, 1 Tbsp minced garlic, and 3 Tbsp corn syrup. Corn syrup adds a subtle sweetness and a nice sheen.

Since corn syrup alone might not be sweet enough, add 3 Tbsp of sugar. You can adjust the sugar amount to your preference. The key is to achieve a good balance of sweet and savory flavors.
