Main Ingredients- 2.5 cups hotcake mix
- 0.5 cup milk (approx. 120ml)
- 1 egg
- 1 cup mashed boiled sweet potato (approx. 150g)
Cooking Instructions
Step 1
First, wash the sweet potatoes thoroughly and peel them. Place them in a pot with plenty of water and boil until they are very tender. You’ll know they’re ready when a chopstick or fork can easily pierce through them. Once cooked, drain the water and turn off the heat.
Step 2
While the sweet potatoes are still warm, use a fork to mash them until smooth. Mashing them while warm prevents lumps and ensures they incorporate well into the batter.
Step 3
In a large bowl, lightly beat the egg with a whisk. Then, add the 0.5 cup of milk (about 120ml) and whisk until well combined and smooth.

Add the 2.5 cups of hotcake mix to the wet ingredients. Gently fold the mixture together with a spatula or whisk until just combined. Be careful not to overmix; overmixing can result in tough muffins.
Step 5
Add the 1 cup of mashed boiled sweet potato to the batter. Gently fold it in until evenly distributed throughout the mixture. Ensure there are no large clumps of sweet potato.
Step 6
Lightly grease your muffin tin cups with oil or line them with paper liners. This step prevents the muffins from sticking, making them easy to remove after baking.
Step 7
Spoon the muffin batter into the prepared muffin cups, filling each about 80-90% full. Overfilling can cause the batter to spill over the sides as they bake.
Step 8
Bake in a preheated oven using the muffin setting for about 25 minutes. If using a conventional oven, bake at 180°C (350°F) for approximately 25 minutes. To check for doneness, insert a toothpick into the center of a muffin; it should come out clean.
