First, wash the sweet potatoes thoroughly and peel them. Place them in a pot with plenty of water and boil until they are very tender. You’ll know they’re ready when a chopstick or fork can easily pierce through them. Once cooked, drain the water and turn off the heat.

While the sweet potatoes are still warm, use a fork to mash them until smooth. Mashing them while warm prevents lumps and ensures they incorporate well into the batter.

In a large bowl, lightly beat the egg with a whisk. Then, add the 0.5 cup of milk (about 120ml) and whisk until well combined and smooth.
