Ingredients- 1/4 medium pumpkin (approx. 200-250g)
- 1/2 apple (small size)
- 7g unsalted butter
- 1 slice baby cheese (optional, for added richness)
- 1 egg
- 2 Tbsp formula powder (dry)
- 3 Tbsp all-purpose flour or rice flour
Cooking Instructions
Step 1
First, wash the pumpkin thoroughly and cut it into bite-sized pieces (about 2-3 cm). Place the pumpkin in a steamer basket and cover. Steam for about 15 minutes, or until it’s tender enough to be easily pierced with a fork. This ensures it will mash smoothly later.
Step 2
While the pumpkin is steaming, peel and core half an apple. Dice it into very small, fine cubes. Finely dicing the apple will make it easier for your baby to chew and digest. Using a food chopper or a knife for precision is recommended.
Step 3
Once the pumpkin is steamed and slightly cooled, remove the skin. Transfer the steamed pumpkin to a bowl. Add 1 slice of baby cheese (optional, but it enhances the flavor!) and the softened 7g of unsalted butter. Mash everything together using a fork or a potato masher until it’s a smooth puree with no lumps. Ensure the cheese and butter are well incorporated.
Step 4
To the mashed pumpkin mixture, add 1 egg. Then, stir in 3 tablespoons of flour (or rice flour) and 2 tablespoons of formula powder. Whisk gently with a fork or spatula until just combined and no dry streaks remain. Be careful not to overmix, as this can result in a tougher bread.
Step 5
For the final step, gently fold in the finely diced apple pieces into the batter. Mix carefully to avoid crushing the apple pieces, so your baby can enjoy the texture of the apple in the finished bread.
Step 6
Spoon the batter into muffin cups or baking liners, filling them about two-thirds full. This prevents them from overflowing during baking. Bake in a preheated oven at 160°C (320°F) for 15 minutes, or until the bread is golden brown and has risen. Let them cool on a wire rack before serving this healthy and delicious treat to your baby.
