Cooking Instructions

Step 1

First, we’ll boil the chicken breast. In a pot, add 4 cups of water, the chicken breast, and some onion, green onion, ginger, and whole peppercorns. This process removes any gamey smell from the chicken and adds flavor. Once the chicken is cooked, remove it, but don’t discard the broth! It’s a crucial ingredient for keeping our stir-fry moist.

In a bowl, crack 2 eggs. Add a pinch or two of salt and a little shrimp paste water, then whisk until smooth. Adding shrimp paste water greatly enhances the egg’s flavor, making it more savory. Set the whisked egg aside for now.

Wash the chives and cut them into 4-5 cm lengths. Thinly julienne the carrot as well; this will give a pleasant texture when stir-fried and add a beautiful color.

Once the boiled chicken breast has cooled slightly, shred it into bite-sized pieces by hand. Shredding it this way helps the seasonings penetrate better and results in a softer texture.

Heat a pan with a little cooking oil. Pour in the whisked egg mixture and quickly stir with chopsticks to create scrambled eggs. Don’t overcook; remove from heat when slightly set and place in a separate bowl. Be careful not to break them when mixing later.

In the same pan, add a little more oil and stir-fry the julienned carrots for a short time. Stir-frying carrots first brings out their sweetness and improves their texture. Cook just until they are slightly softened.

Once the broth is incorporated, add the chives and two pinches of salt, then stir-fry quickly. Chives can become mushy if overcooked, so stir-fry them briefly over high heat.
