Ingredients

  • 150g T55 French flour
  • 150g eggs
  • 100g grated Emmental cheese
  • 90g sun-dried tomatoes
  • 65g cooking cream (35% fat)
  • 65g dry white wine
  • 65g olive oil
  • 65g black olives
  • 65g feta cheese
  • 10g sugar
  • 4g instant dry yeast
  • 3g salt
  • Pinch of black pepper

Cooking Instructions

Step 1

First, prepare the additions. Halve the black olives and cut them into bite-sized pieces. Dice the feta cheese into small cubes. If using sun-dried tomatoes packed in oil, drain them thoroughly in a sieve overnight, then chop them into manageable pieces.

In a large bowl, whisk together the eggs, dry white wine, cooking cream, and olive oil until well combined and smooth. This forms the wet base of your cake salé.

In a separate bowl, combine all the dry ingredients. Mix the T55 flour, instant dry yeast, sugar, salt, and pepper. Whisking the dry ingredients together beforehand ensures they are evenly distributed in the batter.

Gradually add the dry ingredients to the wet mixture, whisking gently as you go. It’s important to add the dry ingredients in batches to prevent lumps from forming. Continue mixing until all the flour is incorporated and you have a smooth batter. ​

Now, gently fold in the prepared additions. Add the olives, feta cheese, and sun-dried tomatoes to the batter. Use a silicone spatula to fold them in carefully, ensuring you don’t overmix or break down the ingredients too much.
