Muffin Batter (Makes approx. 8 muffins)- 3 large eggs
- 90g granulated sugar
- 25g honey
- 4g vanilla extract
- 30g unsalted butter (softened at room temperature)
- 15g vegetable oil (e.g., canola or grapeseed oil)
- 30g milk
- 110g cake flour (sifted)
- 1g baking powder
- 1.5g salt
Glaze for Topping- 8g melted unsalted butter
- 10g honey
- 8g melted unsalted butter
- 10g honey
Cooking Instructions
Step 1
In a large bowl, combine the eggs, granulated sugar, honey, and vanilla extract. Whisk them together thoroughly until well combined and no lumps of honey remain. Ensure the honey is fully incorporated before proceeding.
Step 2
Place the bowl with the egg mixture over a double boiler (a pot with simmering water). Gently heat the mixture, stirring occasionally, until it reaches approximately 40°C (104°F) – it should feel warm to the touch. Remove the bowl from the heat.
Step 3
Using a hand mixer or a stand mixer, whip the egg mixture until it becomes pale yellow, thick, and forms ribbons when the whisk is lifted. This step is crucial for achieving a light and fluffy texture. Continue whipping until the mixture holds its shape briefly.
Step 4
Sift the cake flour, baking powder, and salt over the whipped egg mixture. Gently fold them in using a spatula until just combined and no dry streaks remain. Be careful not to overmix, as this can develop gluten and result in tough muffins.

In a separate small bowl, combine the melted unsalted butter, vegetable oil, and milk. Whisk them together until emulsified. Take about 2-3 tablespoons of the muffin batter and add it to this liquid mixture, stirring gently to combine. This helps to temper the fats and incorporate them smoothly.
