Moist and Fluffy Steamed Cake Made in a Rice Cooker
Easy Rice Cooker Steamed Cake Recipe
Introducing a recipe for a moist and fluffy steamed cake that anyone can easily make using just a rice cooker, without the hassle of an oven. Its cozy and sweet flavor is reminiscent of freshly steamed rice, making it perfect as a snack for kids or a delightful dessert for adults!
Main Ingredients
- 75g cake flour or all-purpose flour
- 3 fresh eggs
- 1 teaspoon (t) baking powder
- 2 tablespoons (T) olive oil
- 2 teaspoons (t) vinegar (or lemon juice)
- 30g granulated sugar
- 2 tablespoons (T) honey
Cooking Instructions
Step 1
First, prepare a heat-resistant glass container or ceramic bowl that can be placed on a steamer rack. Crack 3 eggs into it. This is the start of creating a smooth batter.
Step 2
Place the prepared bowl on a scale. Accurately measure and add 30g of granulated sugar, 2 teaspoons of tangy vinegar (or refreshing lemon juice), and 2 tablespoons of sweet honey. The ratio of ingredients is key to the flavor!
Step 3
Now, use a whisk or fork to lightly beat the eggs. Don’t overmix; just gently whisk until the yolks and whites are combined.
Step 4
Next, add 75g of cake flour (or all-purpose flour) and 1 teaspoon of baking powder. Tip: Sifting the flour before adding it will result in a much smoother and finer textured cake with no lumps. You can also use all-purpose flour.
Step 5
After adding all the dry ingredients, mix them well with a whisk or spatula. Once the batter is somewhat combined, add 2 tablespoons of aromatic olive oil. Scrape all the batter from the sides and bottom of the bowl to ensure it’s incorporated with the olive oil.
Step 6
Now, stir the batter gently for about 5 minutes until all lumps are completely gone and the batter is smooth. Tip: While mixing, use a spatula with a little water on it to scrape down any batter stuck to the sides of the bowl for a cleaner finish. This ensures all ingredients are uniformly mixed for a more delicious cake.
Step 7
Pour about 1cm of clean water into the inner pot of your rice cooker. This water will act as the steam source, keeping the cake moist.
Step 8
Carefully place a steamer rack inside the rice cooker. Position the bowl containing the batter securely on top of the steamer rack. Now, set your rice cooker to the ‘Cook’ or ‘Reheat’ function and steam for 9 minutes. Tip: A common collapsible stainless steel steamer fits well inside a 6-cup rice cooker.
Step 9
After 9 minutes, set the rice cooker to ‘Cook’ or ‘Reheat’ again and steam for an additional 9 minutes. Steaming for a total of 18 minutes ensures the cake is cooked evenly throughout.
Step 10
Once the steaming is complete, your cake is ready! To check for doneness, insert a skewer or toothpick into the center of the cake. If it comes out clean with no batter sticking to it, it’s perfectly cooked.
Step 11
Be very careful when removing the hot steamed cake from the rice cooker. You can then serve it immediately by gently scooping it out with a spoon or fork. Enjoy the fresh, warm, and sweet flavors right away!
