First, carefully separate the egg yolks and whites. Place the yolks in one bowl and the whites in another. To the yolks, add the milk and sifted cake flour, then mix well until you have a smooth batter with no lumps.

To ensure a smooth texture without any clumps, sift the flour through a fine-mesh sieve two to three times. This step contributes to a wonderfully tender cake.
