Castella Cake Batter Ingredients- 2 fresh eggs
- 40g melted butter or vegetable oil
- 80g granulated sugar
- 70g cake flour
- 1 teaspoon baking powder
Cooking Instructions
Step 1
In a clean bowl, crack 2 fresh eggs. Lightly whisk them with a whisk to break the yolks and mix them. Gently stir until the egg whites and yolks are just combined.
Step 2
Melt 40g of butter by microwaving it briefly or heating it over low heat. Alternatively, prepare 40g of vegetable oil.
Step 3
Add the melted butter (or vegetable oil), 40g, to the whisked eggs and gently mix with the whisk. Next, add 80g of granulated sugar and stir well until the sugar is dissolved and the batter is thoroughly combined.
Step 4
Sift the 70g of cake flour twice for a finer batter. Add the sifted flour to the bowl and mix with the whisk until no dry streaks remain, ensuring there are no lumps. Be careful not to overmix, as this can develop gluten and result in a tough texture.
Step 5
Finally, add 1 teaspoon of baking powder and gently mix until the powder is evenly distributed throughout the batter.
Step 6
Prepare a clean, dried milk carton (or any desired mold). Fold the top of the milk carton and secure it tightly and closely with staples. Then, cut one side of the carton to create the mold shape.
Step 7
Grease the inside of the milk carton mold thoroughly with butter or vegetable oil. Using a brush will help you coat every nook and cranny. This step is crucial for easy demolding later.
Step 8
Pour the prepared batter into the greased milk carton mold. Be careful not to overfill; filling it about 70-80% full is ideal.
Step 9
Place the mold with the batter into a preheated oven at 170°C (340°F) and bake for approximately 30 minutes. Adjust the baking time and temperature according to your oven’s specifications. To check for doneness, insert a skewer into the center; it should come out clean.
