Ingredients- 14 large potatoes
- 1 Tbsp coarse salt
- 1 Tbsp brown sugar

Step 1
After peeling the potatoes, soak them in cold water to remove excess starch. Changing the water once more just before boiling will result in cleaner and tastier boiled potatoes. Using large, well-formed potatoes like these will yield even better results.
Step 2
In a pot, add 1 tablespoon of coarse salt and 1 tablespoon of brown sugar, then dissolve them well in water. The salt seasons the potatoes, while the sugar enhances their savory flavor and contributes to a tender texture.

Pour the sugar and salt water mixture into the pot with the potatoes. Ensure there’s enough water to completely submerge the potatoes. If the liquid is insufficient, add more fresh water until the potatoes are fully covered.

Cover the pot and boil over high heat for about 40 minutes. To check for doneness, pierce a potato with a chopstick; it should slide in easily. If the potatoes are cooked but there’s still some water left, immediately drain the water. Then, place the pot back on low heat with the lid off for a moment to allow any remaining moisture to evaporate. This will result in perfectly fluffy and delicious boiled potatoes.
