Enjoy a wonderful dish with just ‘Yeon-Du’ (a Korean soy sauce-based seasoning) – no other seasonings needed! This incredibly simple Salmon Papillote can be prepared in three different ways. With ‘The Recipes of the World’ and ‘Man-Gae Recipe’, anyone can become a chef.
Essential Ingredients- 200g Fresh Salmon Fillet
- 1/6 White Onion
- 1/6 Lemon
- 2 Cherry Tomatoes
- 1 Asparagus Spear
- 1 sprig Fresh Parsley
- 1 Tbsp Yeon-Du (or Korean soup soy sauce)
- 1 Tbsp Extra Virgin Olive Oil
Cooking Instructions
Step 1
First, prepare the vegetables. Slice the lemon into rounds about 1cm thick, and julienne the onion into similar 1cm thick strips. Halve the cherry tomatoes after washing them thoroughly. This step helps the flavors and aromas of each ingredient meld beautifully.
Step 2
Wash the asparagus under running water and trim off about 1cm from the tough bottom end. Then, cut it into three equal pieces. For the fresh parsley, gently pluck the leaves from the stems. These aromatic herbs will enhance the dish’s flavor profile.
Step 3
In a wide bowl, combine the prepared salmon fillet, all the vegetables, the key seasoning Yeon-Du, and olive oil. Gently mix everything together to ensure the ingredients are evenly coated and seasoned. Be careful not to break the salmon while mixing.

Lay out one sheet of parchment paper and place the seasoned salmon and vegetables on it. Cover with another sheet of parchment paper and then carefully fold and crimp the edges multiple times to create a sealed packet, ensuring no ingredients escape during cooking. This is the essence of the ‘papillote’ method.
Step 5
Now, let’s cook the salmon using various methods:
– Pan-Sear: Place the papillote packet in a preheated pan, cover with a lid, and cook over medium-low heat for about 15 minutes. This method keeps the salmon incredibly moist.
– Oven Bake: Bake the papillote in an oven preheated to 180°C (350°F) for 15 minutes. This gentle cooking method brings out the natural flavors of the ingredients.
– Air Fryer: Cook at 180°C (350°F) for 15 minutes for a simple and delicious result. Adjust the cooking time slightly based on your preference.
