Ingredients- 200ml Heavy Cream
- 200ml Milk
- 4 sheets (8g) Sheet Gelatin or Powdered Gelatin
- 50g Sugar (for Panna Cotta)
- 30g Sugar (for Mixed Berry Compote)
- 100g Mixed Berries
- 150g Plain Yogurt
Cooking Instructions
Step 1
First, prepare all the ingredients needed for both the panna cotta and the mixed berry compote. Soak the sheet gelatin in cold water until softened.
Step 2
In a small saucepan, combine the mixed berries and 30g of sugar for the compote. Cook over medium heat for about 5 minutes, gently mashing the berries with a spatula as they cook. This will help release their flavor and create a delicious compote.
Step 3
Strain the cooked mixed berry compote through a fine-mesh sieve. While this step is optional, it will result in a smoother, more refined panna cotta texture. If you prefer a chunkier texture or are short on time, you can skip this step.

Soak the sheet gelatin in a bowl of cold water for about 2 minutes until softened and pliable. If using powdered gelatin, follow the package instructions for hydration. Ensure the gelatin is fully hydrated.

In a clean saucepan, combine the heavy cream, milk, and 50g of sugar for the panna cotta. Heat over medium heat until the mixture just begins to simmer around the edges. Do not boil vigorously. Once you see small bubbles forming, immediately remove from heat.

Add the softened gelatin to the warm cream mixture. Stir well until the gelatin is completely dissolved and no lumps remain. This is crucial for the panna cotta to set properly.

Whisk the plain yogurt into the gelatin-infused cream mixture. Stir gently until fully incorporated and smooth, ensuring there are no lumps. The tanginess of the yogurt will add a lovely counterpoint to the sweetness.

Separate about half of the panna cotta mixture into a separate bowl. Gently fold in the prepared mixed berry compote (strained or unstrained, as preferred) into this portion. This will create a beautiful two-toned effect and add a burst of berry flavor.
