Cooking Instructions
Step 1
First, cut the pork neck into bite-sized pieces (about 3-4 cm) for easy eating. If they are too large, they’ll be difficult to cook, and too small, they might fall apart. The right size is key.
Step 2
It’s important to properly prepare the fresh garlic chives. Wash them thoroughly as they might have soil on them. Then, remove any dark, tough parts near the roots. (You can trim the roots lightly to preserve the fresh garlic chive aroma.)
Step 3
Cut the prepared garlic chives into lengths of about 6 cm. If they are too long, they can be awkward to eat, so cutting them to a suitable length is recommended.
Step 4
In a blender, add the 1/6 onion and 1/8 pear and blend until smooth. If the fruit doesn’t blend well, add 1 Tbsp of rice wine and 1 Tbsp of cooking wine from the marinade ingredients to help it blend smoothly.
Step 5
In a large bowl, combine 1.7 Tbsp miso paste, 1 Tbsp gochujang, 1 Tbsp honey, 1 Tbsp sugar, 1/2 Tbsp minced garlic, 1 Tbsp sesame oil, 1 Tbsp toasted sesame seeds, and 1/2 tsp black pepper. Add the blended onion and pear mixture from the blender. Stir everything thoroughly to create a delicious marinade.
Step 6
Add all the cut pork neck to the prepared marinade and mix gently with your hands. If the pieces are stuck together, gently separate them as you mix to ensure the marinade coats evenly. Marinating for at least 10 minutes will result in a deeper flavor.
Step 7
Now it’s time to grill the meat! First, preheat a frying pan over high heat for about 2 minutes. Once preheated, add the marinated pork neck and reduce the heat to medium. Grill both sides until they turn a nice, golden-brown color.
Step 8
To prevent the meat from burning and to help the marinade soak in well, add 1 Tbsp of water halfway through cooking. This will prevent the marinade from sticking and burning and will keep the meat moist.
Step 9
Once the pork neck is cooked through and looks appetizing, turn off the heat. Finally, add the prepared garlic chives and toss gently for about 30 seconds over the residual heat. This will add the fragrant flavor of the garlic chives, completing your delicious pork neck grill! Enjoy it warm right away.
