Main Ingredients- 4 tomatoes
- 2 onions
- 1 bell pepper (any color)
- 1 zucchini
- 4 cloves garlic
- 1/8 head of cabbage
Cooking Instructions
Step 1
First, prepare all the vegetables for the detox soup. Chop the 4 tomatoes, 2 onions, 1 bell pepper (any color is fine), 1 zucchini, and 4 cloves of garlic into bite-sized pieces, about 2-3 cm. You can peel the garlic and trim the ends of the other vegetables as needed. For the cabbage, prepare 1/8 of a head and chop it into similarly sized pieces.
Step 2
Take a deep pot and heat 2-3 tablespoons of olive oil over medium heat. Add the chopped onions and garlic and sauté for about 2 minutes until they become translucent and fragrant. Sautéing the onions at this stage will bring out their natural sweetness, resulting in a richer flavor.
Step 3
Next, add the chopped zucchini to the pot. Add about 2-3 tablespoons of water. Sauté the zucchini for about 1 minute. This step helps the zucchini soften and meld well with the other vegetables.
Step 4
Now, add all the chopped tomatoes, cabbage, and bell pepper to the pot. Stir gently with a spatula and cook together for 1-2 minutes. The vegetables will release some moisture, deepening the flavor of the soup.
Step 5
Once the vegetables have been sautéed and the cabbage starts to look slightly translucent, pour in enough water to cover all the vegetables. Usually, about 4-5 cups is sufficient, but you can adjust the amount based on the quantity of vegetables. If you prefer a thicker, more concentrated soup, you can use a little less water.
Step 6
Cover the pot with a lid and bring it to a boil, then reduce the heat to medium. Simmer for about 5 minutes. This allows the vegetables to cook thoroughly and their flavors to infuse into the broth. Avoid overcooking, as it can diminish the nutritional value of the vegetables.
Step 7
After 5 minutes, carefully ladle out the cooked soup into a bowl and let it cool. This portion can be enjoyed as is, or you can blend it for a smoother consistency. Repeat the same process (steps 1-5) with the remaining vegetables to make more soup. Making it in batches ensures you have enough for your detox period.
Step 8
Place the first batch of cooled soup into a blender and blend until very smooth. If you prefer a silkier texture, you can strain it through a sieve. Blend the soup from the subsequent batches in the same way.
Step 9
Portion the finished detox soup into containers for freezing or refrigeration. For a more satisfying meal during your detox, serve it alongside chicken breast or hard-boiled eggs. You’ll be amazed by the positive changes you experience with regular consumption!
