This is a low-calorie, healthy bread made with just sweet pumpkin and eggs, without any flour or sugar. To ensure you can eat the skin, thoroughly wash the mini sweet pumpkins using baking soda. Place the cleaned pumpkins in a microwave-safe dish and microwave for 4 minutes. Flipping them halfway through (2 minutes per side) helps them cook evenly.

Carefully handle the hot pumpkins after removing them from the microwave. Let them cool slightly, then cut them in half.

Trim off the stem ends of the pumpkins and use a spoon to scoop out the seeds and stringy bits.

Mash the pumpkin flesh using a fork or a masher. If you prefer a chewier texture, avoid mashing it completely smooth; leaving some small chunks is desirable for bite.

Slice a small portion of the pumpkin beforehand for decoration on top of the bread. (This step is optional and can be skipped if desired.)
