Ingredients- 15 Mini King Oyster Mushrooms (about 2 finger-lengths in size)
- 1/2 Onion
- 500ml Milk
- 2 Tbsp Butter
- 2 Tbsp All-purpose Flour
- 1 tsp Salt (adjust to taste)
- Pinch of Black Pepper
Cooking Instructions
Step 1
First, let’s prepare the star of our dish: the mini king oyster mushrooms. Select about 15 mushrooms that are not too small, roughly the size of two finger-lengths. Using fresh mushrooms will greatly enhance the soup’s flavor.
Step 2
Wash the mini king oyster mushrooms and the half onion thoroughly. Finely mince both. If you prefer a smoother, creamier soup, consider pureeing them in a blender or food processor before mincing. This will result in an even silkier texture.

In a pot, melt 2 tablespoons of butter over low heat. Once the butter is mostly melted and translucent, sift in 2 tablespoons of all-purpose flour. Whisk or stir with a spatula until there are no lumps, forming a smooth paste. This mixture is called a ‘roux’ and will thicken our soup.

After adding the flour, continue to cook over low heat for about 5 minutes, stirring constantly. This process cooks out the raw flour taste and brings out a nutty aroma. Be sure to stir to prevent burning.

Add the finely minced mushrooms and onions to the cooked roux. Sauté them together. The vegetables will quickly soften and release their moisture. Continue to sauté for about 5 more minutes to develop their flavors.

Now, gradually pour in the 500ml of milk. Initially, you might see some clumps, so use a whisk to ensure the milk and vegetables are thoroughly combined. Reduce the heat to low and let the soup simmer gently, stirring frequently to prevent sticking.

Let the soup simmer for at least 20 minutes, or until it reaches your desired consistency. As it simmers, the soup will thicken and the creamy milk and mushroom flavors will meld beautifully.
