Mini Gimbap Ingredients- 4-5 sheets of Gim (seaweed for gimbap)
- 5 pieces of pickled radish (danmuji)
- 5 sticks of gimbap ham
- 1 carrot
Flavorful Rice Seasoning Ingredients- 1.5-2 bowls of cooked rice
- 1 Tbsp sugar
- 1 Tbsp vinegar
- A pinch of sesame seeds
- 1 Tbsp sesame oil
- 2 tsp salt
Sweet & Spicy Mustard Sauce Ingredients- 1 Tbsp soy sauce
- 1 Tbsp oligodang (corn syrup)
- 1.5 Tbsp vinegar
- 1/2 Tbsp mustard powder
- 1.5-2 bowls of cooked rice
- 1 Tbsp sugar
- 1 Tbsp vinegar
- A pinch of sesame seeds
- 1 Tbsp sesame oil
- 2 tsp salt

- 1 Tbsp oligodang (corn syrup)
- 1.5 Tbsp vinegar
- 1/2 Tbsp mustard powder
Cooking Instructions
Step 1
First, let’s prepare the fillings for your mini gimbap. Thoroughly wash the carrot, peel it, and then julienne it into thin, fine strips. Heat a lightly oiled frying pan and sauté the carrot strips with 2 tsp of salt until tender. Sautéing brings out the natural sweetness of the carrots, making them even more delicious.
Step 2
Prepare the gimbap ham by cutting it into pieces roughly the same length as your julienned carrots. Lightly oil a frying pan and gently grill the ham until golden brown. Be careful not to cook over high heat. For the pickled radish (danmuji), make sure to squeeze out any excess water before using it. This prevents the rice from becoming soggy and ensures a neat roll.
Step 3
Now for the rice seasoning, the key to delicious mini gimbap! In a bowl with warm, cooked rice, add 1 Tbsp sugar, 1 Tbsp vinegar, 1 Tbsp sesame oil, and 2 tsp salt. Gently mix everything together with a rice paddle, being careful not to mash the rice grains. Taste the rice and add a little more salt if needed to achieve your desired seasoning.
Step 4
Cut your gim sheets into smaller pieces, about 1/4 or 1/2 of a full sheet, depending on your desired mini gimbap size. Spread a thin layer of the seasoned rice onto a piece of gim. Then, arrange your prepared carrot, ham, and pickled radish fillings on top of the rice. Avoid overfilling, as this can cause the gimbap to break. Lightly moisten the edge of the gim with water and roll tightly to secure the filling.
Step 5
Finally, let’s make the irresistible mustard dipping sauce that pairs perfectly with your mini gimbap. In a small bowl, combine 1 Tbsp soy sauce, 1 Tbsp oligodang, 1.5 Tbsp vinegar, and 1/2 Tbsp mustard powder. Whisk everything together thoroughly with a whisk or fork until smooth and well combined.
