  • 1 whole chicken (preferably a free-range or soup chicken)
  • 3 servings of kalguksu noodles
  • 2 medium potatoes
  • 1 medium onion
  • 9 cups of water (for simmering the chicken)
  • 2 stalks of green onion (mostly the white parts)
  • 6 cups of water (for cooking the noodles)

Seasoning for Broth & Flavor

  • 3 tablespoons cooking oil
  • 1/2 tablespoon salt (for seasoning adjustment)
  • 1/3 cup fish sauce (or soy sauce for soup)
  • 1 tablespoon minced garlic
  • A pinch of black pepper (to taste)

Cooking Instructions

Step 1

First, wash the chicken thoroughly. If there are any excess fats or feather remnants, remove them for a cleaner broth.

Peel and thinly julienne the potatoes and onion. Slice the green onions into roughly 2-3 cm lengths, focusing on the white parts. You can also include some of the green tops if you like.

Heat 3 tablespoons of cooking oil in a large pot over medium heat. Add the washed chicken and stir-fry until the surface is lightly browned. This step adds depth of flavor. Once the chicken is lightly browned, add the julienned onion and stir-fry until the onion becomes translucent.

After browning the chicken, add 9 cups of water, 1/3 cup of fish sauce (or soup soy sauce), and 1/2 tablespoon of salt. Bring to a boil over high heat. Once boiling, reduce the heat to medium and simmer until the chicken is cooked through.

Once the chicken has simmered and the broth has developed flavor, add the julienned potatoes. Cover the pot and continue to simmer until the potatoes are completely tender and soft. Be careful not to overcook them to the point of mushiness.

This helps remove excess starch, preventing the noodles from sticking together and keeping the broth clear.
