Mild Soy-Braised Flatfish for Kids
A Gentle Flatfish Recipe with Soy Sauce, Perfect for Picky Eaters
While adults often prefer spicy braised dishes, I’ve prepared a soy-sauce-based version that’s perfect for children who can’t handle heat yet. This mild and flavorful flatfish dish is a wonderful addition to any meal, ensuring even the youngest family members can enjoy it.
Main Ingredients- 2 cleaned flatfish (kareoi)
- 1 onion
- 1 handful of green onions
Braising Sauce- 5 Tbsp soy sauce
- 2 Tbsp oligosaccharide (adjust sweetness to taste)
- 1 Tbsp mirin (rice wine)
- 1 tsp ginger wine (or a pinch of ginger powder)
- 1 Tbsp minced garlic
- 1 Tbsp white wine (to remove fishiness)
- 150ml water
- Pinch of black pepper (to taste)

Cooking Instructions
Step 1
Rinse the cleaned flatfish gently under running water and pat dry. Arrange the flatfish neatly at the bottom of a wide pot. Pour 150ml of water into the pot. This helps prevent the fish from sticking and ensures it braises evenly.
Step 2
Peel and wash the onion, then slice it thinly into strips (about 0.5cm thick). Evenly distribute the sliced onions over the flatfish. Finely chop or thinly slice the green onions.
Step 3
In a small bowl, combine the soy sauce, oligosaccharide, mirin, ginger wine, and minced garlic. Whisk well to create the braising sauce. Pour this sauce evenly over the flatfish and water in the pot.
Step 4
Place the pot over medium heat and bring to a boil. Once boiling, reduce the heat to low and begin braising. When the sauce starts to thicken slightly, add the chopped green onions, white wine, and a pinch of black pepper. Throughout the cooking process, use a spoon to continuously baste the fish and onions with the simmering sauce. This ensures even flavor distribution and keeps the fish moist. Braise for about 15 minutes. Be careful not to overcook, as the fish can fall apart easily.

Your delicious soy-braised flatfish is ready! The gentle sweetness and savory flavor make it a dish that even three-year-olds can enjoy without hesitation. Serve warm with a bowl of rice for a satisfying meal.
