A Gentle Ham and Cheese Soft Tofu Stew Recipe for the Whole Family
I tried the non-spicy ham and cheese soft tofu stew from a restaurant we often visit, and it was so delicious that I decided to make it at home! The combination of creamy soft tofu, savory ham, and melty cheese makes this stew a family favorite. It’s perfect for a comforting meal and guaranteed to be a hit with children. Let’s make this magical stew that will have everyone asking for seconds!
Ingredients- 1 pack (approx. 350g) soft tofu (sundubu)
- 100g sliced ham or luncheon meat
- 1 large egg
- 1 cup (approx. 100g) shredded mozzarella cheese
- 2 cups (400ml) anchovy-kelp broth
- 1/3 stalk green onion (scallion)
- 1/2 teaspoon salt
- 1 tablespoon soup soy sauce (guk-ganjang)
Cooking Instructions
Step 1
First, prepare the ingredients for the soft tofu stew. Cut the ham into bite-sized pieces, about 1-1.5cm cubes or strips, suitable for children. Briefly blanching the ham in hot water helps remove any impurities and results in a cleaner taste. Finely chop the green onion.
Step 2
Pour 2 cups of anchovy-kelp broth into a pot and bring to a boil over high heat. Once the broth is boiling, gently spoon the entire pack of soft tofu into the pot. Try not to stir too vigorously; aim to keep the tofu chunks intact for a better texture.
Step 3
Add the prepared ham to the soft tofu stew and let it simmer together. The ham will release a delicious umami flavor, enriching the broth.
Step 4
Reduce the heat to medium. Season the stew with 1 tablespoon of soup soy sauce and 1/2 teaspoon of salt. Since this is for children, avoid making it too salty. Taste and adjust the seasoning with more salt or soup soy sauce if needed, according to your preference.
Step 5
Finally, generously sprinkle the shredded mozzarella cheese around the edges of the pot or in a traditional Korean earthenware pot (ttukbaegi). Carefully crack one egg into the center. Cover the pot with a lid or plastic wrap and cook for another 2-3 minutes. Cooking the egg until the yolk is still slightly runny will make it even creamier and more delicious. Garnish with the chopped green onions just before serving to complete this appetizing ham and cheese soft tofu stew!
