Kid-Friendly Mild Vegetable Curry Recipe & Storage Tips for Busy Days
This mild vegetable curry is a lifesaver when you don’t feel like cooking! My son, who’s usually picky about meat, absolutely devours this curry, making me feel so rewarded. It’s packed with colorful vegetables and has a gentle flavor that’s perfect for little ones. If you have leftovers, portion them and freeze for a quick and delicious meal later!
Main Ingredients- 1 packet mild curry powder (approx. 100g)
- 2 medium potatoes
- 1 onion
- A small piece of carrot
- A small piece of zucchini
- 700ml water
Cooking Instructions
Step 1
First, let’s prepare the vegetables that will form the delicious base of our curry. Wash the potatoes and carrot thoroughly. Cut them into bite-sized cubes, about 1.5cm. Heat 1-2 tablespoons of cooking oil in a pan over medium heat. Add the cubed potatoes and carrots and stir-fry for about 3-4 minutes until they start to look slightly translucent.
Step 2
Once the potatoes and carrots are partially cooked, it’s time to add the onion and zucchini. Peel and chop the onion into medium pieces, and cut the zucchini into similar-sized pieces. Add them to the pan with the other vegetables. Stir gently with a spatula to prevent sticking and cook for another 2-3 minutes, until the onion begins to turn translucent.
Step 3
When the vegetables start to release their fragrant aroma, pour in 700ml of water into the pot. Bring the water to a boil over high heat, then reduce the heat to medium. Cover the pot slightly and let it simmer for about 10-15 minutes, or until the vegetables are tender. You can check if they’re cooked by piercing a potato with a chopstick; it should go in easily.
Step 4
After confirming that all the vegetables are tender, it’s time to add the mild curry powder. Take about one ladleful of the broth from the pot and mix it with the 1 packet (approx. 100g) of curry powder in a separate small bowl until smooth. This helps prevent lumps. Then, pour this mixture back into the pot and quickly stir until well combined. Ensure there are no lumps and the powder is evenly distributed.
Step 5
Once the curry powder is fully dissolved, bring the curry back to a simmer over medium heat. Stir continuously as it thickens and becomes glossy. Turn off the heat as soon as it reaches your desired consistency. Be careful not to overcook, as it can burn at the bottom!
Step 6
Serve the delicious curry generously over a bowl of warm rice. Gently mix the curry and rice together for your little one, and you have a wonderful meal! For leftovers, allow the curry to cool completely, then portion it into individual servings and freeze. This way, you’ll have a convenient and tasty emergency meal ready anytime.
