Kid-Friendly Cucumber Kimchi Recipe Made with Gochujang
This is a gentle and mild cucumber kimchi recipe that’s perfect for young children. We peel the skin, scoop out the seeds, and season it with gochujang for a soft texture. It’s a delicious side dish that the whole family can enjoy. Simple to make, it’s a great way to have fresh cucumber kimchi at home!

Step 1
First, thoroughly wash 4 cucumbers under running water. This step removes any dirt or debris from the skin.
Step 2
Using a vegetable peeler, peel the skin off all the cucumbers. This makes the cucumbers much softer and easier for children to eat.
Step 3
Cut the peeled cucumbers in half lengthwise. Then, use a spoon to gently scrape out the seeds from the inside of each cucumber half. Removing the seeds reduces moisture and creates a cleaner texture.
Step 4
Now, slice the deseeded cucumbers into bite-sized pieces. To ensure a pleasant chewiness without being too mushy, slice them diagonally and not too thinly. This will give you a satisfying texture with every bite.
Step 5
Peel and thinly julienne 2 onions. These will add a nice crunch and sweetness when mixed with the cucumbers. Try to slice them to a similar thickness as the cucumber pieces for even seasoning.

Place the prepared cucumbers and julienned onions in a bowl. Add 1 Tbsp of coarse sea salt and 1 Tbsp of sugar. Mix well and let it sit for 30 minutes. This process wilts the vegetables and draws out excess moisture, making them softer and less bitter.

After 30 minutes, squeeze out the excess water from the cucumbers and onions by hand and discard the liquid. Transfer the drained vegetables to a clean bowl. Thoroughly squeezing out the water is key to preventing a diluted flavor.
Step 8
It’s time to mix in the seasonings! Add 2 Tbsp sugar, 1 Tbsp minced garlic, 1 Tbsp gochujang, 1/2 Tbsp fish sauce, and 1 Tbsp vinegar. Gently mix everything together with your hands until well combined. You can adjust the amount of gochujang to suit your children’s palate.
Step 9
Finally, sprinkle 1 Tbsp of toasted sesame seeds on top for a nutty aroma, and your delicious cucumber salad is ready! It’s tasty right away, but chilling it in the refrigerator for a bit will make it even more refreshing.
