- 1 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Soy Sauce
- 1/2 Tbsp Sugar
- 1/2 Tbsp Sesame Oil
- 1/2 Tbsp Toasted Sesame Seeds
- 1 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Soy Sauce
- 1/2 Tbsp Sugar
- 1/2 Tbsp Sesame Oil
- 1/2 Tbsp Toasted Sesame Seeds
Cooking Instructions
Step 1
First, thoroughly wash the young green peppers. Soak them in water with 2 tablespoons of vinegar for about 10 minutes to sanitize, then rinse under running water. After rinsing, gently twist off the stems of the peppers by hand. This makes them easier to eat and helps the seasoning penetrate better.
Step 2
Prepare for coating the peppers with sweet rice flour and all-purpose flour in the steamer. Before placing the peppers in the steamer basket, lightly coat them with sweet rice flour first, then evenly sprinkle the all-purpose flour over them. Coating with sweet rice flour first helps the all-purpose flour adhere better, resulting in a richer texture when steamed.
Step 3
Arrange the flour-coated young green peppers evenly in the steamer basket. Gently shake the basket to ensure the flour coats each pepper uniformly. This helps the peppers and flour meld together beautifully during steaming for a delightful texture.
Step 4
Steam over medium-high heat for about 10 minutes. The moisture from washing the peppers and the steam from the pot will help the flour stick to the peppers, and both the peppers and flour will cook to a tender consistency. If, after steaming, the flour appears too white, you can lightly sprinkle a little water over the top while it’s still in the steamer. However, be careful not to add water at the beginning, as it can cause the flour to dissolve and slide off.
Step 5
Once the peppers are steamed, let them cool slightly. Once the steam has subsided a bit, carefully transfer the steamed peppers from the steamer to a wide bowl using a rice paddle or similar utensil. Be gentle to avoid crushing the peppers.
Step 6
Now it’s time to season the steamed peppers. In a separate small bowl, mix all the seasoning ingredients together: gochugaru, soy sauce, sugar, sesame oil, and toasted sesame seeds. You can adjust the amount of sugar according to your preference.
Step 7
Pour the prepared seasoning mixture evenly over the steamed young green peppers in the bowl. Make sure to add enough seasoning for the peppers to be well coated.
Step 8
Finally, gently toss the peppers with the seasoning until they are well combined. Avoid vigorous mixing, as this can mash the peppers. Gently mix them (‘jomal-jomal’) for the best results. This completes your fragrant and delicious steamed young green pepper dish with flour!
