Mild and Savory Beef and Napa Cabbage Soybean Paste Stew
A gentle and savory stew perfect for a 4-year-old son with a cold and a mother 4 months pregnant. Enjoy a comforting and delicious meal together!
Main Ingredients- 1.5 liters Broth (Anchovy and Kelp Stock)
- 100g Beef (for stew)
- 10 leaves Young Napa Cabbage
- 1/3 pack Oyster Mushrooms
- 1/2 pack King Oyster Mushrooms
Seasoning & Others- 2 Tbsp Soybean Paste
- 1 Tbsp Minced Garlic
- 1 Tbsp Cooking Wine (Cheongju)
- 1 Tbsp Sesame Oil
- Chopped Scallions (to taste)
- 2 Tbsp Soybean Paste

Cooking Instructions
Step 1
First, prepare about 1.5 liters of savory broth by simmering anchovies and kelp in water. This forms the foundation for a clear and deep soup flavor.
Step 2
Pat the beef dry with paper towels to remove excess blood. Then, mix it with 1 Tbsp minced garlic and 1 Tbsp cooking wine, gently massaging it in. Let it marinate for about 10 minutes to tenderize the meat.
Step 3
If you’re cooking for young children, it’s best to chop the beef and cabbage into small, bite-sized pieces. However, for adults, you can cut them into larger, more rustic chunks. Feel free to adjust the size according to your preference.
Step 4
Tear the oyster mushrooms into bite-sized pieces with your hands. Trim the base of the king oyster mushrooms and then separate them into strands.
Step 5
Add 1 Tbsp of sesame oil to the marinated beef, along with 1 Tbsp of the prepared broth to prevent sticking. Sauté the beef until it develops a nice, appetizing brown color.

Pour in the remaining broth and dissolve the soybean paste. It’s recommended to strain the soybean paste through a sieve into the pot to ensure it melts smoothly without lumps, resulting in a velvety texture.

When the soybean paste broth begins to boil vigorously, add the young napa cabbage and all the prepared mushrooms. Simmer until the vegetables are tender.
Step 9
Finally, add a generous amount of chopped scallions for a fresh aroma. If you prefer a spicy kick, you can add sliced chili peppers at this stage along with the scallions.
Step 10
Continue to simmer for about 5 more minutes. Taste the soup and, if needed, adjust the seasoning with Korean soy sauce (Guk-ganjang) to your liking. Using Guk-ganjang will enhance the umami flavor.

Since I couldn’t add chili peppers for my child, we enjoyed ours with a sprinkle of chili powder on the side. For adults, you can add chili powder or sliced hot peppers for a spicier experience! Enjoy your delicious meal!
