Using a mandoline slicer can be convenient, but be careful as it’s easy to get slices that are too thick. If they’re too thick, you’ll end up with something closer to chewy dried sweet potato than crispy chips, so thin slicing is key!

Slicing the sweet potato thinly might take a bit longer than you expect. Aim for the thinnest slices possible to achieve that chip-like texture. Slices around 0.1-0.2 cm thick are ideal.

Soak the thinly sliced sweet potato in cold water for about 10 minutes to remove excess starch. This helps reduce stickiness and results in a cleaner texture.

Drain the sweet potato slices using a colander, then thoroughly pat them dry with paper towels. Any remaining moisture can make the sweet potato soggy after microwaving.

Line a microwave-safe plate with parchment paper and arrange the sweet potato slices in a single layer, making sure they don’t overlap. Microwave for 3 minutes. I microwaved mine for a total of about 10 minutes. The key is to let them cool sufficiently and flip them over during the process. As they cool, you’ll feel the exterior become chewier and more elastic.
