5-Minute Microwave Steamed Eggs: Fluffy and Moist without the Stove
This is an easy steamed egg recipe made using a microwave. It’s wonderfully moist inside and can be customized with your favorite ingredients. A simple side dish recipe that’s perfect for busy days.
Ingredients- 3 large eggs
- 10 cm green onion (white part preferred)
- 0.5 Tbsp salted shrimp (including brine)
- 2 Tbsp fish sauce or tuna extract
- 200 ml water
Cooking Instructions
Step 1
First, prepare about 10 cm of green onion. To ensure even distribution and a smoother texture in the steamed eggs, slice the green onion lengthwise in half and then finely chop it. If children will be eating this, mincing it very finely is recommended.
Step 2
In a ttukbaegi (Korean earthenware pot) or a microwave-safe bowl, crack 3 eggs. Whisk them gently until the yolks and whites are smoothly combined. Make sure to completely break down any stringy bits of the egg white for an extra silky texture. Add 2 tablespoons of tuna extract or fish sauce for a savory depth, 0.5 tablespoon of salted shrimp (including its flavorful brine) for a salty and umami kick, and all the chopped green onions. Mix everything together thoroughly with a spoon or a whisk.
Step 3
Carefully pour 200 ml of water into the egg mixture. The amount of water is crucial for adjusting the consistency and achieving your desired level of moistness. Gently stir again to ensure all ingredients are uniformly blended.
Step 4
Now, let’s utilize the microwave! Place the prepared egg mixture in the microwave and heat for 2 minutes and 30 seconds for the first round. Carefully remove it from the microwave and gently scrape the mixture from the bottom up with chopsticks or a spoon. This step is important to prevent the top from overcooking and ensure even cooking throughout. Return it to the microwave and heat for another 2 minutes and 30 seconds. This will result in steamed eggs that are as soft and moist as if they were cooked over a stove. (Adjust cooking time based on your microwave’s wattage.)
