Hello everyone! Today, I made a super simple soy sauce egg rice that you can whip up in just 5 minutes, perfect for busy mornings or late-night cravings. I was inspired by the microwave soy sauce egg rice introduced by Lee Chan Won on the TV show ‘Pyeonstorang’, so I decided to give it a try. Normally, you’d fry an egg in a pan, then mix it with rice, soy sauce, sesame oil, and sesame seeds. But frying an egg means washing extra dishes! Plus, you have to stand there watching it cook, which is tough when you’re really busy. This microwave recipe lets you do other things while the egg cooks, making it ideal for hectic mornings. Ingredients- 1 bowl of warm rice
- 2 eggs
- 2 Tbsp soy sauce (jin-ganjang)
- 1/4 Tbsp sesame oil
- 2 Tbsp water
Cooking Instructions
Step 1
Prepare a microwave-safe bowl and a spoon. You don’t need a large bowl for mixing the rice; a small bowl to cook the egg is sufficient.
Step 2
In the prepared bowl, combine 2 Tbsp of soy sauce, 1/4 Tbsp of sesame oil, and 2 Tbsp of water. This sauce mixture will add flavor to your rice and egg. Next, carefully crack in 2 eggs. Using the back of a spoon, gently prick the egg yolks just to break them slightly. Breaking the yolks only a little, rather than scrambling them completely, helps achieve a moist and tender texture after microwaving. Cover the bowl with plastic wrap or a microwave-safe lid. (Caution: If using a lid, leave it slightly ajar for steam to escape, or poke a few holes in the plastic wrap.)
Step 3
Place the bowl in the microwave and cook for approximately 1 minute 30 seconds to 1 minute 40 seconds. The eggs should be cooked to a soft-boiled consistency, remaining wonderfully moist. Cooking times can vary depending on your microwave’s wattage, so start with a shorter time and check the eggs. If they need more cooking, add short increments of time. Carefully remove the bowl from the microwave once the eggs are done to your liking.
Step 4
Pour the microwaved egg mixture over the warm rice. Stir everything together with a spoon until the rice, egg, and sauce are well combined. Your delicious soy sauce egg rice is complete! For extra flavor, you can also add some roasted seaweed flakes or sesame seeds if you like.
