Microwave Pork Belly Boiled & Seared (Suyuk)

I had some pork belly slices meant for grilling, but I found grilling to be a bit messy with splattering oil and generally troublesome. I wondered if I could cook it in the microwave, and it actually worked! This recipe allows you to enjoy tender, boiled pork belly quickly and easily without the mess.

Suyuk Ingredients

  • Pork belly slices (desired amount)
  • 1-2 onions
  • 1 green onion
  • Salt
  • Pinch of black pepper
  • 1/2 – 1 packet of ramen seasoning powder (for the ramen seasoning version)

Ssamjang (Dipping Sauce) Ingredients

  • 1 Tbsp perilla seed powder
  • 1 Tbsp gochujang (Korean chili paste)
  • 0.5 Tbsp doenjang (Korean soybean paste)
  • 0.5 Tbsp honey

Cooking Instructions

Step 1

First, thinly slice one onion and spread it evenly on the bottom of a microwave-safe dish. The onion will help to tenderize the pork and prevent it from drying out.

Next, place the green onion on top of the sliced onions. I used the green parts of the leek, but you can use any part of the green onion. This step is optional, but it adds a subtle aromatic flavor.

Arrange the pork belly slices on top of the onion and green onion. Lightly season the pork belly with salt. Make sure to season both the fatty and meaty sides evenly.

Sprinkle a pinch of black pepper over the pork belly. Now, carefully flip the pork belly slices over to season the other side.

Season the flipped side of the pork belly with salt and pepper just like before. Place the lid on the dish (or cover with microwave-safe wrap) and microwave for about 12 minutes. Since I’m using thin pork belly slices meant for grilling, 12 minutes was sufficient. Adjust the cooking time based on the thickness of your pork belly.

We’ll make another batch using ramen seasoning powder for a different flavor. Follow the same method: place sliced onions at the bottom of the microwave dish, top with green onion, and then arrange the pork belly. Instead of salt and pepper, season the pork belly with the ramen seasoning powder for an extra savory kick.

See how beautifully cooked the suyuk is after coming out of the microwave? It’s perfectly tender and juicy.

Once cooked, use scissors or a knife to cut the suyuk into bite-sized pieces. The pork seasoned with ramen powder might have a slightly reddish hue, but don’t worry – it’s delicious!

Now, let’s make the special ssamjang to accompany the suyuk. Start by adding 1 tablespoon of perilla seed powder to a small bowl.

Add 1 tablespoon of gochujang (Korean chili paste).
