  • 300g milk chocolate

  • Wooden sticks (popsicle sticks)

Ganache Filling

  • 1 cup red chocolate (or strawberry flavored chocolate)
  • 1/3 cup heavy cream
  • 1 piece butter (approx. 10g)

Cooking Instructions

Step 1

[Making the Rice Cake Dough] First, sift 200g of glutinous rice flour into a fine sieve. This step helps to create a smoother texture for the rice cakes. Add 4 tablespoons of sugar to the sifted flour and mix well with a spatula or spoon.

Step 1

Step 2

Gradually add 300g of warm water while mixing the dough. The amount of water may vary slightly depending on the glutinous rice flour, so adjust it to achieve a dough that is not too sticky. Once the dough comes together, transfer it to a microwave-safe bowl, cover with plastic wrap, and microwave for 1 minute at a time, for a total of 4 times. (You can take it out and stir in between each interval for even cooking!)

Step 2

Step 3

Be careful, the rice cake will be hot when taken out of the microwave! It’s done when it becomes translucent. While the rice cake is still hot, coat your hands with plenty of cornstarch and knead the dough thoroughly. Kneading until the dough is smooth will result in chewy and delicious rice cakes. (Wearing gloves makes kneading easier!)

Step 3

Step 4

[Preparing the Chocolate] Now, let’s prepare the chocolate for coating and decorating our Piggy Bars. First, place 300g of milk chocolate in a heatproof bowl. Set this bowl over a pot of simmering water (double boiler method) and gently melt the chocolate. Ensure no water gets into the chocolate. Melt the chocolate pen colors similarly using the double boiler method.

Step 4

Step 5

Lay out parchment paper and use the melted chocolate pen to draw the ears, nose, and eyes for the Piggy Bars. Draw them in any shape you like, then let them set completely. (Placing them in the refrigerator for a short while will help them harden faster!)

Step 5

Step 6

[Making the Ganache] Let’s make the delicious ganache that will fill our Piggy Bars. Place about 1 cup of red chocolate (or strawberry-flavored chocolate) in a bowl and melt it over simmering water using the double boiler method. Once the chocolate is fully melted, gradually add 1/3 cup of warm heavy cream, stirring until well combined.

Step 6

Step 7

When the cream and chocolate are smoothly blended, add 1 piece of butter and stir until it melts into the mixture. This will create a smooth and sweet ganache.

Step 7

Step 8

[Shaping the Piggy Bars] Now that all the components are ready, let’s start shaping the Piggy Bars! Sprinkle a generous amount of cornstarch onto a clean work surface or cutting board. Take portions of the kneaded rice cake dough (about 50-60g each), flatten them into a disc, then press gently in the center to create a well. Spoon 1-2 tablespoons of the ganache into the well. Seal the rice cake dough around the ganache to form an oval shape, ensuring the filling doesn’t leak out.

Step 8

Step 9

Carefully insert a wooden stick into the pointed end of each shaped rice cake bar. Dip each bar into the melted milk chocolate to coat it evenly. While the chocolate is still wet, quickly sprinkle chocolate crunch all over it. (If the chocolate starts to set too quickly, gently re-melt it before continuing.)

Step 9

Step 10

Finally, carefully attach the pre-made ears, nose, and eyes to the chocolate-coated Piggy Bar. Once the cute Piggy Bar face is complete, let them set at room temperature until firm. When fully hardened, your delicious homemade Piggy Rice Cake Bars are ready! Enjoy a fun snack time with your family!
