While I don’t usually have a huge sweet tooth, there are times when only something this delightfully sweet will do. They’re surprisingly simple and incredibly easy to make. Ingredients

  • 2 large eggs
  • 90g granulated sugar
  • Food coloring or powder (optional)
  • 1/2 Tbsp lemon juice

Carefully separate the egg yolks from the whites, as we’ll only be using the egg whites. Place the egg whites in a clean bowl. Begin whipping them vigorously in one direction using a hand mixer or a whisk until they start to form foamy bubbles.

As you continue whipping, the foam will become more voluminous. At this stage, gradually add the 90g of granulated sugar in three separate additions while continuing to whip. Adding sugar incrementally helps the meringue become stable and glossy. Keep whipping until the meringue is stiff and shiny, forming firm peaks when you lift the whisk.

Once the meringue reaches stiff peaks, add the 1/2 tablespoon of lemon juice for a touch of brightness and gently fold it in. Then, add your desired food coloring or colored powder. Carefully mix it through, being mindful not to deflate the meringue. Aim for beautiful pastel hues.

Prepare a piping bag fitted with your favorite tip (a round tip works well). Carefully spoon the meringue mixture into the piping bag. Pipe small cookies onto a baking sheet lined with parchment paper. Try to create a slight ‘tail’ as you finish piping for a charming look.

Preheat your oven to 100°C (212°F). Meringue cookies require low and slow baking to achieve that perfect crispness. Bake for approximately 80 to 90 minutes. It’s best to avoid opening the oven door frequently during baking. Once baked, allow the cookies to cool completely inside the oven for maximum crispiness.
