Ingredients

  • 3 mini brioche buns
  • 1-2 mentaiko (spicy cod roe)
  • 1 piece of butter
  • 1 Tbsp mayonnaise
  • 1 Tbsp honey
  • 1/2 Tbsp minced garlic

Cooking Instructions

Step 1

First, slice the mini brioche buns in half horizontally. If you’re using a baguette or sandwich bread, you can slice them in half or into pieces as desired. It will be delicious with baguette or sandwich bread too.

Step 1

Step 2

Carefully remove the casing from the mentaiko and gently scrape out the roe. Be gentle when separating the roe from the casing to prevent it from bursting.

Step 2

Step 3

In a small bowl, melt one piece of butter by microwaving it for about 1 minute until soft. Add half a tablespoon of minced garlic, one tablespoon of sweet honey, and one tablespoon of creamy mayonnaise to the melted butter.

Step 3

Step 4

Add the prepared mentaiko roe to the butter mixture and stir well until all ingredients are thoroughly combined. You’ll have a smooth mentaiko mayo sauce with no lumps.

Step 4

Step 5

Generously spread the prepared mentaiko mayo sauce onto the cut sides of the brioche buns. Spreading plenty of sauce ensures it soaks into the bread, making it even more delicious. While it’s already a fantastic mentaiko snack as is, toasting it lightly will add a delightful crispiness on the outside and a moist texture inside.

Step 5

Step 6

Place the mentaiko garlic bread, with the sauce spread evenly, into an air fryer preheated to 165°C (330°F) for 5 minutes. Bake for approximately 10 minutes. The baking time may vary depending on your air fryer or oven, so it’s a good idea to check the bread after about 5 minutes and adjust the baking time as needed. Your delicious mentaiko garlic bread is ready when the surface is golden brown and crispy.

Step 6

Step 7

You probably haven’t thought of making mentaiko into a dessert like this before, have you? Mentaiko pairs wonderfully with almost anything, but the mentaiko mayo combination is truly exceptional. It’s a delightful blend of savory, rich, and salty flavors. Making them bite-sized is perfect for snacks, desserts, or even light appetizers!
