Avocado was once a bit intimidating, but now it’s a staple in our home for its health benefits. I tried making Mentaiko Avocado Bibimbap using this easy and popular recipe. It’s perfect as a satisfying one-bowl meal, both impressive in appearance and wonderfully soft and delicious.
Mentaiko Avocado Bibimbap Ingredients- 1 ripe avocado
- 2 strings of mentaiko (spicy pollock roe)
- 1 egg
- A pinch of shredded seaweed (gim)
- A handful of leafy greens (e.g., baby greens)
Seasoning Sauce- 1 Tbsp soy sauce
- 1 Tbsp sesame oil
- 1 tsp sesame seeds
- Chopped green onions for garnish

Cooking Instructions
Step 1
Cut the avocado in half and remove the pit. A simple way to remove the pit is to firmly stick a knife into it and twist gently to pull it out. If the avocado is very ripe and you’re worried about it mashing, you can carefully scoop out just the pit with a spoon. Handle the avocado gently as it’s quite soft and prone to mashing.
Step 2
Now, let’s peel the avocado. If it’s perfectly ripe, the skin should peel off easily. The flesh is wonderfully soft. If it seems too mushy, be extra gentle; even your fingernails might leave an imprint. Once the skin is completely removed, your avocado is ready for preparation.

We’ll create a beautiful avocado ‘flower’ next. This is easier than you might think! First, slice the avocado as thinly as possible. The thinner the slices, the more elegant your flower will look. Arrange the thin avocado slices side-by-side, then carefully roll them up. It’s quite simple, isn’t it?
