  • Occasion : Everyday
  • Cooking : Steamed
  • Servings : 3 servings
  • Cooking Time : Within 60 minutes
  • Difficulty : Beginner

Main Ingredients

  • 500g beef shank
  • Store-bought beef short rib sauce (to taste)
  • 1 medium onion
  • 2 stalks green onion
  • 2 handfuls garlic (approx. 20-25 cloves)
  • 1/2 carrot
  • 10 chestnuts
  • 1 tsp coarse salt
  • 100ml water (or broth)

Cooking Instructions

Step 1

First, cut the beef shank into large pieces. Soak the cut meat in cold water for at least an hour to remove excess blood. This step is crucial for a clean taste without any gamey odor.

Step 1

Step 2

Place the bloomed beef shank in a pot and add enough water to fully submerge the meat. Add 1 whole onion, 1 stalk of green onion, a handful of garlic, and 1 tsp of coarse salt. This helps to tenderize the meat and remove any unwanted smells.

Step 2

Step 3

Cook the prepared ingredients in an electric pressure cooker using the ‘Nutrient Steaming’ mode for 45 minutes. Using a pressure cooker significantly shortens the cooking time while achieving incredible tenderness.

Step 3

Step 4

Even at this stage, the meat will be unbelievably soft, almost melting in your mouth. It’s so tender that even babies over one year old can eat it without any issues!

Step 4

Step 5

Remove the tenderly cooked beef from the pot and pour in some of the cooking liquid (broth). Add the prepared carrot, the remaining green onion, garlic, and chestnuts. Chestnuts add a natural sweetness, while carrots and green onions enhance the flavor and texture.

Step 5

Step 6

Now, add the store-bought beef short rib sauce to the meat and mix well to coat. Adjust the amount of sauce to your preference, keeping in mind it will reduce during simmering, so avoid making it too salty. Add about 100ml of water to achieve the right consistency for the sauce.

Step 6

Step 7

Finally, simmer the dish uncovered over medium-low heat until the vegetables are tender and the sauce has thickened and coated the meat beautifully. Be careful not to overcook, as this can make the beef tough. Enjoy your delicious braised beef shank!
