Main Ingredients

  • 1kg Beef Brisket (thinly sliced)
  • 2 Onions
  • 4 handfuls of your favorite mushrooms (e.g., shiitake, oyster, king oyster)

Special Sauce

  • 1 cup Onion-Pickled Soy Sauce (or 2 Tbsp regular soy sauce)
  • 1 Tbsp Sugar (if using onion-pickled soy sauce)
  • 2 Tbsp Oyster Sauce
  • 4 Tbsp Sugar (if using regular soy sauce base)
  • 8 Tbsp Soy Sauce (if not using onion-pickled soy sauce)
  • 2 Tbsp Mirin (rice wine)
  • 1 Tbsp Minced Garlic
  • Pinch of Black Pepper
  • Chopped Green Onion, to taste
  • Sesame Seeds, to taste
  • Sesame Oil, to taste

Cooking Instructions

Step 1

Prepare all your ingredients. Gently pat the beef brisket with paper towels to remove any excess moisture. Slice the onions thinly, and prepare the mushrooms by cutting them into bite-sized pieces. If you’re using wide glass noodles, soak them in cold water for about 30 minutes beforehand.

Step 2

Make the special sauce. In a bowl, combine 1 cup of onion-pickled soy sauce with 1 tablespoon of sugar and mix well. (Alternatively, if you don’t have onion-pickled soy sauce, mix 8 tablespoons of soy sauce, 4 tablespoons of sugar, 2 tablespoons of mirin, 1 tablespoon of minced garlic, 2 tablespoons of oyster sauce, and a pinch of black pepper.) Add the beef brisket to this sauce and gently marinate it by massaging it with your hands. Cover and refrigerate for at least 30 minutes. This marinating step allows the flavors to deeply penetrate the meat, resulting in a richer taste.

Step 3

Heat a large pan or wok over medium heat and add a touch of sesame oil. Add the marinated beef brisket and stir-fry until the surfaces are lightly browned. Be careful not to overcook, as brisket cooks quickly. Once the beef is partially cooked, add the sliced onions and prepared mushrooms. Continue to stir-fry until the mushrooms have softened and the onions become translucent. If using soaked glass noodles, add them at this stage and cook until they are tender and well-coated with the sauce.
