Introducing the popular ‘Marinated Eggs’ recipe by Lee Sang-min, recently featured on the TV show ‘My Little Old Boy’! This dish is incredibly easy to make with simple ingredients and boasts a rich, savory flavor that makes it a perfect sidekick for rice. I initially made only three eggs out of curiosity, but they turned out to be surprisingly delicious and satisfying. The salty-sweet taste is perfect for mixing with a bowl of warm rice.
For the Marinated Eggs- 3 Eggs
- 1 Tbsp Mirin (or cooking wine)
- 1 Tbsp Sake (or rice wine)
- 1 Tbsp Sugar
- 1/3 cup Soy Sauce (approx. 60ml)
- 1 cup Water (approx. 200ml)
- 1 handful Bonito Flakes (katsuobushi, for dashi)
For Serving with Rice- 1 Green Onion (finely chopped)
- A pinch of Toasted Sesame Seeds
- 1 Tbsp Sesame Oil
- 1 empty Plastic Bottle (for separating egg yolks)

Cooking Instructions
Step 1
This recipe is incredibly simple and can be made easily with just eggs and an empty plastic bottle. Let’s check our ingredients!
Step 2
First, wash the eggs thoroughly. Then, carefully crack each egg into a bowl, similar to how you would prepare a fried egg.
Step 3
It’s crucial to separate the egg whites from the yolks without breaking the yolks. If the yolks break, the soy sauce base can become cloudy, so keeping them intact is key. While you can crack the egg in your hand and let the white drain through your fingers, transferring only the yolk to another bowl, using an empty plastic bottle makes this process much cleaner and easier. Place the bottle opening over the yolk, gently squeeze the bottle to create suction, and lift the yolk into the bottle.
Step 4
Now, let’s make the marinade base. In a saucepan, combine the soy sauce, water, mirin, sake, and sugar. Stir well and bring to a boil over medium-high heat. Once it boils, immediately turn off the heat and add the bonito flakes. Let them steep for about 5 minutes to infuse the flavor, then strain the liquid through a fine-mesh sieve to get a clear soy sauce base. Ensure this marinade base is completely cooled before proceeding.
Step 5
Carefully place the separated egg yolks into the cooled soy sauce base. Ensure the yolks are submerged in the liquid. Cover the container with a lid or plastic wrap and refrigerate for marination. While delicious immediately, marinating in the refrigerator for about a day will develop a deeper, richer flavor.
Step 6
I let mine marinate for about a day and a half, and when I took them out, the yolks had beautifully absorbed the marinade, looking perfectly plump and appealing.
Step 7
Place the marinated egg yolks on a bed of warm rice. Sprinkle with finely chopped green onions, toasted sesame seeds, and drizzle with 1 tablespoon of sesame oil. Mix everything together for a truly delightful meal!
