Ingredients

  • 2 Eggs
  • 130g Ground Pork
  • 1/4 Onion
  • 1 Stalk Green Onion
  • 1 Green Chili Pepper
  • 1 Red Chili Pepper
  • 2 Tbsp Chili Oil
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Doubanjiang (Spicy Bean Paste)
  • 1 Tbsp Oyster Sauce
  • 1/2 Tbsp Sugar
  • 1 Tbsp Soy Sauce
  • Pinch of Salt
  • Pinch of Black Pepper
  • 1.5 Cups Water
  • 1 Tbsp Cornstarch Slurry (1 Tbsp cornstarch + 2 Tbsp water, mixed)
  • 2 Bowls Cooked Rice

Cooking Instructions

First, prepare the vegetables. Finely dice the onion. Remove the seeds from the green and red chili peppers and dice them coarsely. Thinly slice the green onion.

Heat a pan over medium-high heat and add the chili oil. Sauté the sliced green onion and minced garlic until fragrant, about 30 seconds. Add the diced onion, green chili, and red chili peppers and stir-fry until softened. Then, add the ground pork, breaking it up with a spoon, and cook until browned and fully cooked through.

Once the pork is cooked, stir in the doubanjiang, oyster sauce, and sugar. Pour in the water and bring to a simmer. Reduce the heat to medium-low and let it cook for 2-3 minutes to allow the flavors to meld together.

Season the sauce with soy sauce and adjust with a pinch of salt and pepper to taste. To thicken the sauce, gradually stir in the cornstarch slurry until it reaches your desired consistency. Be careful not to add too much at once, and stir continuously as it thickens to prevent lumps.

Now, the mapo sauce is almost ready. Carefully crack the two eggs directly into the simmering sauce, trying not to break the yolks. Let the eggs cook for about 1-2 minutes, or until the egg whites are set but the yolks are still runny (soft-boiled). If you prefer, you can cook them longer for a firmer yolk. Turn off the heat as soon as the eggs reach your desired doneness.
