A Delicious Mapo Podubu Recipe That Doesn’t Need Rice!

This dish beautifully marries the savory, spicy flavors of Korean Mapo Tofu with the unique chewy texture of Podubu (dried tofu skin noodles). Key Ingredients (Serves 2-3)- 300g ground beef
- 1/2 block firm tofu (approx. 150-200g)
- 1 sheet Podubu (dried tofu skin sheets, approx. 100-150g)
- 1 stalk green onion
- 150ml beef bone broth (or chicken broth)
- 1 Tbsp tapioca starch
Flavorful Sauce- 1 Tbsp Doubanjiang (spicy bean paste)
- 1 Tbsp oyster sauce
- 0.5 Tbsp soy sauce
- 1 Tbsp Gochugaru (Korean chili powder)
- 1 Tbsp paprika powder (for color, not spice)
- 1 Tbsp low-sodium chicken stock (use 1/3 Tbsp if using regular chicken stock; can be omitted)
- 1 Tbsp Allulose (or sugar)
- 1 Tbsp Doubanjiang (spicy bean paste)
- 1 Tbsp oyster sauce
- 0.5 Tbsp soy sauce
- 1 Tbsp Gochugaru (Korean chili powder)
- 1 Tbsp paprika powder (for color, not spice)
- 1 Tbsp low-sodium chicken stock (use 1/3 Tbsp if using regular chicken stock; can be omitted)
- 1 Tbsp Allulose (or sugar)
Cooking Instructions
Step 1
Heat 1 Tbsp of sesame oil in a wide pan over medium heat. Cut the Podubu into noodle-like strips and add them to the pan. Stir-fry until lightly golden brown. This step enhances the Podubu’s texture and flavor. Once lightly browned, remove the Podubu from the pan and set aside.
Step 2
Add another 1 Tbsp of sesame oil to the same pan. Add the 300g of ground beef and stir-fry over high heat. Cook until the beef is browned on all sides to seal in the juices.
Step 3
Prepare the green onion: finely mince the white part and cut the green part into 2-3cm lengths. Add the minced white part to the pan with the beef and sauté until fragrant.
Step 4
Add all the prepared sauce ingredients to the pan. Stir well with the beef, ensuring the sauce doesn’t burn. Cook for about a minute until fragrant.
Step 5
Pour in the 150ml of beef bone broth. Let it simmer and slightly reduce, deepening the flavors.
Step 6
Cut the 1/2 block of tofu into 2cm cubes and gently add them to the pan. Stir carefully to avoid breaking the tofu.
Step 7
In a small bowl, mix 1 Tbsp of tapioca starch with 2 Tbsp of cold water to create a slurry. Gradually add this slurry to the pan while stirring constantly, until the sauce thickens to your desired consistency.
Step 8
Return the stir-fried Podubu to the pan. Gently mix everything together. Simmer for another 2-3 minutes until the sauce has thickened and coated all ingredients beautifully. Ensure the Podubu absorbs the delicious sauce.
