Main Ingredients- 2 slices of sliced ham
- 2 slices of processed cheese
- A little cooking oil
Mansun Mushroom Batter- 300g Mansun mushrooms (trimmed and washed)
- 100g cabbage (washed clean)
- 6 eggs (fresh)
- 4 Tbsp all-purpose flour (for a smoother texture)
- 5g salt (approx. 1 tsp, to taste)
Sweet Special Toast Sauce- 5 Tbsp ketchup (for the sweet base)
- 2 Tbsp honey mustard (for a zesty and sweet kick)
- 2 Tbsp mayonnaise (for creaminess)
- 4 Tbsp sugar (adjust to your preference)

Cooking Instructions
Step 1
Gently wash the fresh Mansun mushrooms under running water. Then, tear them into small, bite-sized pieces following the natural grain of the mushrooms. This technique ensures a tender texture and helps the mushrooms absorb flavors better.
Step 2
Wash the cabbage and remove the core. Finely shred the cabbage into thin strips, similar in size to the torn mushrooms. If you’re short on time, a food processor can be used for shredding.
Step 3
In a large bowl, combine the torn Mansun mushrooms, shredded cabbage, and 6 cracked eggs. Add 4 tablespoons of flour and 5g of salt. Whisk everything together with chopsticks or a whisk until a smooth batter is formed. The batter should be thick enough to hold its shape, not too runny.
Step 4
Heat a non-stick pan over medium-low heat and add a generous amount of cooking oil. Use a square mold to shape the batter into neat patties. If you don’t have a mold, you can freehand the shape into circles or squares. Cook slowly over low heat, flipping once, until both sides are golden brown. This slow cooking process creates a crispy exterior and a moist interior.
Step 5
Take two golden-brown mushroom patties. Place a slice of ham and a slice of cheese on top of one patty. Then, place the second patty on top to form a sandwich. Gently press down to help the cheese melt. Finally, prepare the special toast sauce by mixing 5 Tbsp ketchup, 2 Tbsp honey mustard, 2 Tbsp mayonnaise, and 4 Tbsp sugar.
