How to Make Burdock Leaf Wraps: Steaming and Cooking Recipe
I made delicious burdock leaf wraps using fresh burdock leaves. Enjoy this healthy and flavorful dish made with tender, steamed burdock leaves and seasoned rice.

- 1 bowl Cooked rice
Cooking Instructions
Step 1
I’ve got a bunch of fresh burdock leaves, which are tender and soft this time of year. They are perfect for steaming and eating as wraps (ssambap).
Step 2
Burdock leaves can have tough fibers along the stems. To remove them, hold the tip of the leaf and pull downwards towards the stem. This will strip away the fibrous parts cleanly.
Step 3
After removing the tough fibers, place the burdock leaves in a bowl and soak them in water with 1 tablespoon of vinegar for about 5 minutes. This helps reduce any bitterness and thoroughly cleans them. Then, rinse them two to three times under running water and gently press to remove excess moisture.
Step 4
Arrange the cleaned burdock leaves in a steamer basket and steam for about 5 minutes. You can check if they are done by gently touching a leaf or piercing it with chopsticks; it should feel soft. Adjust the steaming time based on the thickness and condition of your burdock leaves.
Step 5
The burdock leaves are perfectly steamed! Remove them from the steamer and let them cool slightly.
Step 6
Prepare 1 bowl of cooked rice for the wraps. Using warm rice will help the seasoning mix in more evenly.
Step 7
This is the finely minced Cheongyang chili pepper that will season the rice. Make sure to remove the seeds and mince it very finely so it blends well with the rice. You can adjust the amount to your preference or use a different type of chili pepper.
Step 8
Add the finely minced Cheongyang chili pepper to the warm rice and mix thoroughly with a spatula or spoon. Ensure the seasoning is evenly distributed throughout the rice grains. The spicy aroma will whet your appetite.
Step 9
Now it’s time to assemble the wraps. Lay the steamed burdock leaf flat with the vibrant green, tender side facing upwards. The side where you’ll place the rice will be slightly rougher and paler. This is where we’ll put the seasoned rice to form the wrap.
Step 10
Take about a spoonful of the seasoned rice and place it on your palm. Gently shape it with your fingers into a long oval form. It’s easier to shape the rice while it’s still warm.
Step 11
Place the shaped rice onto the rougher side of the burdock leaf. Then, carefully wrap the burdock leaf around the rice, tucking it in to create a neat parcel. Be gentle to avoid tearing the leaf.
Step 12
Once you’ve wrapped all the rice with the burdock leaves, your delicious burdock leaf wraps (ssambap) are ready!
