Cooking Instructions
Step 1
First, thoroughly wash the fresh eggplant and trim off the stem. Cut it in half lengthwise. Place the cut side up on a microwave-safe plate, cover with plastic wrap, and microwave for 1 minute and 30 seconds until softened. This step helps the eggplant cook faster and achieve a tender texture.
Step 2
Let the microwaved eggplant cool slightly. Then, using a knife, make shallow cuts across the skin side of the eggplant halves. Gently spread the eggplant open. This ‘scoring’ allows the sauce to penetrate deeply, making every bite more flavorful.
