Norwegian Mackerel Stew with Dried Radish Greens
Tender dried radish greens with savory Norwegian mackerel create a dish that’s absolutely perfect with a bowl of hot rice. It’s a true ‘rice thief’ that will awaken your appetite like never before!
Main Ingredients- 2 Norwegian mackerels (cleaned)
- 2 handfuls of boiled dried radish greens (approx. 200g)
- 1/2 medium onion
- 1 green chili pepper
- 1 green onion
Stew Seasoning- 0.5 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Soy sauce
- 2 Tbsp Fish sauce (anchovy or sand lance)
- 1 Tbsp Anchovy extract (or seafood extract)
- 2 Tbsp Korean chili powder (coarse)
- 1 Tbsp Minced garlic
- 0.5 Tbsp Sugar
- A pinch of Black pepper
- 2 Tbsp Cooking wine (Mirin or similar)
- 3 Tbsp Soju (or white wine)
Dried Radish Greens Seasoning- 1 Tbsp Doenjang (Korean soybean paste)
- 0.5 Tbsp Korean chili powder (coarse)
- 0.5 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Soy sauce
- 2 Tbsp Fish sauce (anchovy or sand lance)
- 1 Tbsp Anchovy extract (or seafood extract)
- 2 Tbsp Korean chili powder (coarse)
- 1 Tbsp Minced garlic
- 0.5 Tbsp Sugar
- A pinch of Black pepper
- 2 Tbsp Cooking wine (Mirin or similar)
- 3 Tbsp Soju (or white wine)

Cooking Instructions
Step 1
First, rinse the boiled dried radish greens thoroughly in cold water to remove any dirt or impurities. Squeeze out excess water. This step helps reduce any bitterness and allows the greens to absorb flavors better.
Step 2
In a bowl, combine the squeezed dried radish greens with 1 Tbsp of doenjang and 0.5 Tbsp of chili powder. Mix well by hand to season the greens. The doenjang adds a nutty flavor and deepens the umami.
Step 3
In a separate bowl, mix all the stew seasoning ingredients: gochujang, soy sauce, fish sauce, anchovy extract, chili powder, minced garlic, sugar, black pepper, cooking wine, and soju. Stir until the sugar is dissolved to create a delicious sauce.
Step 4
In a pot with a deep base, spread the seasoned dried radish greens evenly at the bottom. Place the prepared Norwegian mackerel on top of the greens. Slice the onion thinly and arrange it over the mackerel. Slice the green onion and green chili pepper diagonally and scatter them on top for color and a hint of spice.
Step 5
Pour 400ml of water into the pot, enough to mostly cover the ingredients. You can adjust the amount of water based on your desired stew consistency.
Step 6
Evenly spoon the prepared stew seasoning sauce over the mackerel and radish greens. Make sure to coat everything well for maximum flavor.
Step 7
Cover the pot and bring it to a boil over high heat for about 5 minutes. Boiling at high heat initially helps the ingredients cook quickly.
Step 8
After 5 minutes, reduce the heat to medium-low and cover the pot again. Let it simmer gently until the dried radish greens and mackerel are very tender and the sauce has thickened to your liking.
