Cooking Instructions
Step 1
Thinly slice the garlic into slivers. Finely shred the onion. (This is about 10 large cloves of garlic and 1/4 of a small onion.)
Step 2
Heat a pan with a little olive oil over medium heat. Sauté the sliced garlic and shredded onion until golden brown and fragrant. Be careful not to burn the garlic; sautéing it until a gentle brown will enhance its flavor.
Step 3
Once the garlic and onion are nicely sautéed, add 20g of butter and let it melt. Then, pour in 70g of milk (about 1/2 of a paper cup), 70g of heavy cream (about 1/2 of a paper cup), and 5g of sugar (about 1/2 Tbsp). Simmer over low heat for 5 minutes until the sauce thickens slightly. The sauce will reduce and develop a creamy texture and sweet aroma.
Step 4
Season the reduced cream sauce with a pinch of salt and pepper to taste. Adjust the seasoning as needed. Let the sauce cool slightly before the next step, which will help it blend more smoothly.

Pat the steaks dry with paper towels to remove excess moisture. Season generously on all sides with salt, black pepper, and dried basil. Proper seasoning is key to bringing out the natural flavor of the steak.

Heat a skillet over high heat with a little olive oil. Sear the seasoned steaks for a couple of minutes per side until a nice crust forms, locking in the juices. Quick searing over high heat is important for a good sear.

After searing both sides on high heat, reduce the heat to low. Add 1 Tbsp of butter to the pan. Baste the steak with the melted butter as it cooks. This butter-basting technique, known as ‘arroser,’ will make the steak incredibly moist and flavorful.

Once the cream sauce has cooled slightly, use an immersion blender or a regular blender to purée it until very smooth. This creates a velvety garlic cream sauce.
Step 9
