Main Ingredients- 1 fresh eggplant (small size)
- 2 tortillas
- 1/2 fresh onion
- 5 sweet cherry tomatoes
- Black olives (to taste)
- 2-3 tbsp fragrant arugula pesto
- 2 tbsp rich ketchup or tomato sauce
- Generous amount of mozzarella cheese
- Parmesan cheese powder for added flavor

Step 1
First, prepare two tortillas. Spread a thin layer of fragrant arugula pesto on one tortilla and a generous amount of sweet and tangy ketchup or tomato sauce on the other. Then, stack the two tortillas together to create your pizza base.
