  • 3 Live Abalones (innards removed, thinly sliced)
  • 1/3 Daikon Radish (cut into bite-sized pieces)

  • 2 Onions (cut into large pieces)
  • 2 Green Onions (cut diagonally into large pieces)

Spicy Seasoning Paste

  • 1 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Doenjang (Korean soybean paste)
  • 6 Tbsp Guk-ganjang (Korean soup soy sauce)
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Ginger Syrup (or a pinch of ginger powder)
  • 5 Tbsp Gochugaru (Korean chili flakes, adjust to taste)
  • Pinch of Black Pepper

Cooking Instructions

Step 1

First, let’s create a delicious base for our seafood broth. In a pot, add water, dried kelp, and anchovies (or dried bogeum-che (thread herring)). Simmer for 15-20 minutes to extract a rich broth, then remove and discard the kelp and anchovies.

Step 1

Step 2

In a separate pot, combine the sliced daikon radish, 1 tablespoon of minced garlic, and 1 tablespoon of sesame oil. Sauté over medium-low heat until the radish becomes slightly translucent. This step helps release the radish’s natural sweetness, making the broth even more refreshing.

Step 2

Step 3

Once the radish is lightly sautéed, pour in the kelp broth you prepared earlier and bring it to a boil over high heat. Once boiling, reduce the heat to medium.

Step 3

Step 4

Now, let’s prepare the spicy seasoning paste that will add depth and kick to our seafood stew. In a bowl, mix 1 tablespoon of gochujang, 1 tablespoon of doenjang, 6 tablespoons of guk-ganjang, 1 tablespoon of minced garlic, 1 tablespoon of ginger syrup, 5 tablespoons of gochugaru, and a pinch of black pepper. Mix thoroughly until well combined. (If you don’t have ginger syrup, you can use a tiny amount of ginger powder.)

Step 4

Step 5

Pour the prepared seasoning paste into the simmering broth. Stir well to ensure the paste dissolves and integrates evenly into the soup.

Step 5

Step 6

Once the broth returns to a rolling boil, it’s time to add the main ingredients. Maintain a strong boil to allow the flavors to meld together beautifully.

Step 6

Step 7

Add the generously chopped onions. The natural sweetness from the onions will dissolve into the broth, creating a richer and more complex flavor profile.

Step 7

Step 8

When the broth starts boiling vigorously again, carefully add the cleaned live crabs. To prepare the crabs, remove the carapace (shell) and thoroughly clean the gills. (For a cleaner taste, it’s recommended to also remove the innards from the carapace).

Step 8

Step 9

Add all 10 live crabs! (If the crabs are still alive and moving, handle them safely during cooking.) Even if some crab legs break off, they will contribute to the deliciousness of the broth, so feel free to add them all in.

Step 9

Step 10

Now, add the cleaned live abalone and shrimp. Seafood can become tough if overcooked, so it’s important to add them at the right moment.

Step 10

Step 11

If you don’t have rice wine (cheongju), you can add a small amount of soju (about 1-2 tablespoons) to help eliminate any fishiness and enhance the umami flavor.

Step 11

Step 12

With such fresh seafood and quality ingredients, it’s almost impossible to go wrong! The key is to let the natural flavors of the ingredients shine through.

Step 12

Step 13

The wonderful aroma of the seafood stew cooking fills the kitchen as it nears completion! Let it simmer over medium heat for about 5-7 minutes, allowing the flavors from the ingredients to infuse deeply into the broth. The broth is becoming wonderfully rich!

Step 13

Step 14

Finally, add a generous amount of the large-cut green onions. Their freshness and aroma will further refine the broth, making it even cleaner and more delicious. The broth is truly exceptional!

Step 14

Step 15

Skim off any foam that forms on the surface while cooking. This will result in a clearer and more refined broth. Take your time to skim it carefully.

Step 15

Step 16

We are almost done! Turn off the heat and let it rest for a moment. Your delicious homemade seafood stew will be ready to enjoy. All that’s left is the pleasure of eating!

Step 16

Step 17

Serve the hot broth and fresh seafood generously in bowls and enjoy! This refreshing and spicy broth is perfect with a bowl of rice. It’s a taste you won’t forget!
