Ingredients- 200g chicken tenderloin
- 20g dried seaweed
- 1 Tbsp sesame oil
- 2 Tbsp minced garlic
- 1 Tbsp soy sauce for soup (guk-ganjang)
- 1 Tbsp fish sauce (or tuna extract)
- 1/4 tsp salt (or to taste)
- Pinch of black pepper
- 1.4L water
Cooking Instructions
Step 1
First, soak the dried seaweed in cold water for about 5 minutes until it becomes soft and pliable. Gently rinse the rehydrated seaweed under running water, squeezing out any excess moisture. Pat it dry and then cut it into bite-sized pieces, about 3-4 cm long.
Step 2
Rinse the chicken tenderloins briefly under cold water. Bring a pot of water to a boil, and blanch the chicken tenderloins for 1-2 minutes to remove any impurities and the raw odor. Drain the blanched chicken, rinse under cold water, and then slice them into pieces about 1 cm thick.
Step 3
Heat a heavy-bottomed pot over low heat and add 1 tablespoon of sesame oil. Add the prepared seaweed and sliced chicken tenderloin to the pot. Sauté them gently for 2-3 minutes, being careful not to burn them. This step helps to enhance the flavors of the ingredients.
Step 4
Once the seaweed and chicken are lightly sautéed, pour in 1.4 liters of cold water and increase the heat to high. Once the soup begins to boil, add 2 tablespoons of minced garlic, 1 tablespoon of soy sauce for soup, 1 tablespoon of fish sauce, 1/4 teaspoon of salt, and a pinch of black pepper. Stir well to combine.

After the soup returns to a boil, reduce the heat to medium-low, cover the pot with a lid, and let it simmer gently for about 20 minutes. This simmering period allows the chicken to become tender and infuses the broth with the rich, savory flavor of the seaweed.
