  • 1 pack Tofu noodles (approx. 200-250g)
  • 1 handful Shrimp (peeled and deveined, approx. 100g)
  • 1/2 Onion (approx. 70-80g)
  • 3-4 cloves Garlic
  • 2-3 Dried chili peppers (adjust to your spice preference)

Seasoning & Others

  • 6-7 Tbsp Olive oil
  • 2 pinches Salt (or to taste)
  • Pinch of Black pepper

Cooking Instructions

Step 1

First, prepare the tofu noodles. Open the package, drain the liquid, and gently rinse the noodles under cold running water. This helps remove any beany smell and ensures the noodles are clean for cooking.

Step 1

Step 2

Let’s get the ingredients ready. Thinly slice the garlic cloves. It’s important to slice them thinly so their flavor infuses well into the olive oil. Slice the onion into about 0.5cm thick pieces, or chop it coarsely.

Step 2

Step 3

Prepare the shrimp. If using frozen shrimp, thaw them in the refrigerator beforehand or rinse them under running water to thaw gently. After thawing, pat the shrimp dry thoroughly with paper towels. This prevents oil splattering and ensures better flavor when sautéing.

Step 3

Step 4

Now, let’s start cooking! Heat a pan over medium-low heat and generously add 6-7 tablespoons of olive oil. Add the sliced garlic and sauté gently, being careful not to burn it, until it turns a nice golden brown. The key is to let the garlic flavor infuse into the oil.

Step 4

Step 5

Once the garlic starts to turn golden and fragrant, add the sliced onion to the pan and sauté together. Cook until the onions become translucent and their sweetness is released.

Step 5

Step 6

Add the dried chili peppers to enhance the spicy flavor. Crumble them with your hands to release the seeds, which will make the dish more fiery. If you prefer less heat, you can omit them or use fewer.

Step 6

Step 7

Add the prepared shrimp to the pan and stir-fry with the other ingredients. Cook until the shrimp turns pink and is almost cooked through. Be careful not to overcook, as shrimp can become tough if cooked for too long.

Step 7

Step 8

When the shrimp are almost done, add the rinsed tofu noodles to the pan. It’s time to season! Sprinkle in 2 pinches of salt and a pinch of black pepper, then gently toss everything together to combine. Tofu noodles cook very quickly, so avoid overcooking.

Step 8

Step 9

Your delicious Tofu Noodle Aglio e Olio is ready! It’s a healthy dish that reduces calories while preserving the classic Aglio e Olio flavors. While the texture isn’t as chewy as traditional pasta, it fully captures the appealing taste and aroma.

Step 9

Step 10

Tofu noodles have a slightly firmer texture compared to regular noodles, which offers a unique charm. It’s surprisingly delicious and has become one of my go-to recipes when I’m craving pasta while dieting. Enjoy your meal! ^^
