Main Ingredients- 10kg fresh lemons

Cooking Instructions
Step 1
Begin by thoroughly washing the fresh lemons. Sprinkle a generous amount of baking soda onto the lemon surface and scrub them thoroughly with your hands. This is effective for removing surface contaminants and wax coating. If you still feel unsure, you can further rinse and scrub with salt after the baking soda wash for extra peace of mind.
Step 2
Washing the lemons until they look clean and shiny brings a sense of accomplishment, doesn’t it? These squeaky clean lemons are now ready for the main preparation.
Step 3
Since we’ll be using the lemon peel, first trim off both ends of each lemon. Then, using a mandoline slicer or a sharp knife, thinly julienne the lemons into approximately 2mm thick strips. It’s crucial to meticulously remove any seeds that appear, as they can impart a bitter taste. Removing seeds will result in a cleaner and more delicious preserve.
Step 4
Fresh ginger often has soil on it, so wash it thoroughly under running water. The peel contains nutrients, so be careful not to scrub too hard; just remove any dirt.
Step 5
Now, it’s time to peel the thoroughly washed ginger. Using the curved edge of a spoon makes peeling the ginger relatively easy and convenient. If a spoon isn’t available, you can also use a knife to carefully peel off the skin.

Peel the ginger and then slice it thinly, similar to the lemons. Slicing them not too thick ensures that the ginger’s flavor and aroma infuse well into the preserve, and makes them easier to consume when you drink it as tea later.

Add all the measured sugar to the prepared lemons and ginger. Mix well until the sugar begins to dissolve. It’s important to stir thoroughly to ensure the sugar melts evenly. While white sugar yields a clear and attractive color for the preserve, organic raw sugar might result in a slightly cloudier appearance. You can choose the type of sugar based on your preference.
Step 8
Neatly pack the finished lemon ginger preserve into sterilized glass jars. Make sure the jars are completely dry before filling them to prevent mold growth. Filling the jars generously makes the preserve look even more appealing.
Step 9
This beautifully jarred lemon ginger preserve can be enjoyed immediately, but allowing it to mature will deepen its flavors. Leave the finished preserve at room temperature for about a day, then refrigerate and let it mature for at least two weeks.
